Lavender is an essential oil obtained by steam distillation from the flowering tops of the true lavender. The true lavender (Lavendula angustifolia, L. officinalis or L. vera) is the most valuable species in the lavender genus. The plant grows in most of the Mediterranean region. However, the most famous region where the lavender occurs naturally is the sunny limestone slopes of southeastern France, the Haute Provence. The plant grows between 800 and 1800 meters in height. The yield of lavender is around 1%. Good quality oil requires between 100 and 150 kilos of lavender flowers for 1 liter! With a very good harvest, a lavender farmer can distill perhaps 25 liters of oil from one hectare (that is 10,000 m2) of lavender plants! Real lavender oil therefore cannot be cheap. The color of lavender is colorless to light yellow. The color of lavender darkens as the oil ages. The scent is very recognizable: sweet and spicy with an undertone of flowers and wood.
Lavender can be used very well in the kitchen. For example, add 1 to 2 drops of lavender oil to a jar of honey. read here more examples of recipes with lavender.
